The domain of Montevertine is located on the hillsides of Chianti and is directed by Martino Manetti. The 18 ha (45 acres) of vines, for the most part composed of Sangiovese, are cultivated naturally with the greatest respect possible for the vine and the terroir. Le Pergole Torte is a wine made 100% out of Sangiovese from a small 2 ha (5 acre) parcel planted in 1968. After hand harvest, the grapes are placed in cement vats for the fermentation. Following this, the wine is aged for 18 months in Slovakian oak barrels before being bottled, aged another 6 months in the domain’s cellar, and then commercialized.
